
These are delicious muffins we created, they pack around 100 calories per muffin!
Ingredients:
250g (1 cup) unsweetened applesauce
45ml (3 tbsp) unsweetened almond milk
2 tsp vanilla extract
2 tsp apple cider vinegar
65g (~½ cup) oat flour
43g (~1â…“ scoop) vanilla or cinnamon protein powder
12 packets (½ cup no-calorie sweetener) (We used a stevia sweetner)
½ tsp salt
2.5g (½ tsp) baking powder
1g (¼ tsp) baking soda
¼ tsp cinnamon (if not using cinnamon protein powder you can add more based on your preference)
80g chopped apples
Directions:
Preheat oven to 350 F.
Mix all the wet ingredients together in one bowl
Mix all dry ingredients in another bowl
Add wet ingredients to dry ingredients bowl and mix thoroughly
Spoon the mixture evenly into muffin pan filling the muffin slots roughly 2/3 or 3/4 full depending on the size of your muffin pan really (you can use cupcake baking liners in muffin pan to prevent the muffins from sticking in the pan) or lightly oil the muffin pan slots to prevent sticking.
This Recipe Makes 8 muffins (1 muffin per serving)
Cook in the oven for 20-25 minutes checking them regularly to avoid overcooking them.
